Trevor's Chipotle Guacamole
This crowd pleaser is by far my most requested appetizer. If you have a sensitivity to cilantro, simply use basil. Traditionally fresh chilies are used in Mexico; however, the Chipotle's signature smokiness is a match made in heaven with avocados!

Ingredients
  • 1 pc Chipotle Pepper – No Seeds Add More For Extreme Heat
  • 150 g Tomatoes
  • 1 Bunch Basil - Picked Leaves
  • 40 g Shallot
  • 12 g Fresh Garlic
  • 10 g Salt taste
  • 230 g Lime Juice
  • 50 g Adobo - Chipotle Sauce From Can
  • 850 g Avocados Diced 6 pc

  • 150 g Tomatoes
  • 1 Bunch Basil - Picked Leaves
  • 40 g Shallot
  • 12 g Fresh Garlic
  • 10 g Salt taste
  • 230 g Lime Juice
  • 50 g Adobo - Chipotle Sauce From Can
  • 850 g Avocados Diced 6 pc
Instructions
  1. Blend all the ingredient except the avocados and tomatoes.
  2. Once blended, add your tomatoes and pulse 3 times to roughly chop.
  3. Remove the pits and empty your avocado into a large mixing bowl.
  4. Add the blended mixture to the avocados while mixing with a large fork.
  5. Continue mix until desired consistence is achieved and liquid has been absorbed.
  6. Some people like large chunks of avocado where as I like it to be fairly smooth. The Choice is yours.
