  • 1.2 kg Caramelized Onion
  • 100 g Roasted Garlic
  • 80 g Ginger Root
  • 1.2 g Roasted Piquillo Peppers
  • 250 g Chipotle Peppers
  • 20 g Himalayan Sea Salt
  • 200 g Thyme Dried Or Fresh Picked Leaves
  • 100 g Stevia
  • 500 g Raw Honey Optional For Sweetness
  • 500 ml Sherry Vinegar
  • 100 ml Worcestershire Sauce
  • 20 g Coriander Seeds Toasted & Ground
  • 10 g Black Peppercorns Toasted & Ground
  • 5 L Canned Chopped Tomatoes
  • 1 pc Lemon Zest
  • 50 g Allspice Toasted & Ground
  • 200 g Avocado Oil For Cooking With

Instructions
  1. Peel, slice and caramelize the onions, garlic and ginger in a medium heat pan until golden.
  2. Add the peppers, peppercorn coriander seeds and cook for a further 5 minutes.
  3. Add all the remaining ingredients and simmer for 35 minutes.
  4. Puree in the blender and strain through a fine strainer to remove chunks.
  5. Use within 2 weeks.
